Arakkaparambil Kurien Antony is the full name of the Defence Minister. It is pronounced as uh-ruck-uh-per-umbil (as in umbilical) courien (just like courier except with an 'n' at the end). In Hindi this would read as
अरक्कअपरम्बिल कुर्यन ऍंटनी. Please note that in Kerala, the name is generally pronounced as an-duh-nee or if you can read Hindi - as ऍंडणी. But you would be fine with the normal English pronunciation.
